This afternoon, blogging took a back seat to baking

Banana Bread

Tastes even better than it looks!

Banana Bread

1 Tablespoon Bourbon (or vanilla)
1 Egg
2 Tablespoons butter, melted
2 small bananas, mashed (approx 3/4 Cup)
1/4 C. Buttermilk
1/2 C. Brown Sugar
1 1/4 C. Flour
1 teaspoon Salt
1 teaspoon Baking Powder
1/2 C. Walnuts (optional)

Sift together dry ingredients.
Cream the sugar, egg, butter, bourbon, bananas and buttermilk.
Add the dry ingredients to the creamed mixture,
and stir with a wooden spoon until batter is smooth.

Bake at 350 for 20-30 minutes, until the top is golden and cracking.

This recipe makes one small (6") bundt pan,
2 miniature loaves, or 4-6 muffins.
